Cupcakes!
I know I said I would post pictures from the cupcake race that I was doing with my ski students forever ago, but I just got around to it now. Whoops! You guys should try the lemon cupcakes, they are absolutely delicious. I used this recipe but substituted yogurt for the buttermilk and put lemon curd on the top instead of frosting. So so yummy!
If you have kids, these vanilla cupcakes will be a hit, I promise. I used this recipe (which is perfect for baking in high altitude, they came out so fluffy) and added sprinkles to the batter to make confetti cupcakes with vanilla frosting and sprinkles on the top. The frosting is incredible, I want to try putting it on some chocolate cake, it was just so good!
Happy baking (and Cinco de Mayo too)!

I am so hungry and then I saw these cupcakes on my blog and wanted every last one of them. Those lemon ones look so so good. Lemon anything is my favorite. I think I may need to try the recipe! Isla, Annalise, and I are baking cupcakes tomorrow so my vote are for these two recipes lady! xx
Oh my nom. Those raspberry tops look so delectable. I'll have to add that to my summer to-do list :)
I'm in love with cupcakes. The shape, taste and colour.
